Vorsant Advisory is a boutique fractional strategic and transaction advisory practice based in Denver, Colorado. We work exclusively with growth-stage businesses — companies between $1M and $20M in revenue — across real estate, retail and consumer, and finance and private equity.

Gianmarco Macchiaroli has spent more than thirty years building, financing, and advising businesses across private equity, real estate, consumer and food service, construction, franchising, M&A, and joint ventures. His career is not a straight line through one industry — it is a series of operating roles, capital events, and advisory engagements that collectively form one of the more unusual resumes in independent advisory.
Noodles & Company — From Inception to National Brand
Marco joined Noodles & Company as one of four original executives, helping build the concept from a single location into a multi-market restaurant company. Over seven years, the team grew the brand to more than $40 million in annual sales with over 1,200 employees, at one point opening five new locations in seven weeks. He was directly involved in raising more than $10 million in investor capital and building the operational infrastructure that made rapid expansion possible. The company went on to trade on NASDAQ under the ticker NDLS and today operates more than 450 locations nationwide.
Zenco Capital — CEO & Founder
Marco founded and served as CEO of Zenco Capital, a $50 million-plus agricultural CPG venture built entirely from the ground up. The role demanded fluency across supply chain design, regulatory compliance, capital markets, and large-scale facility construction — including the development of a 75,000-square-foot commercial facility. The experience reinforced a lesson that shapes every engagement today: strategy and capital only matter if operations can execute.
Jack Link's — Growth Strategy Consulting
Through Blossom Growth Partners, Marco led strategic advisory engagements for Jack Link's, one of the world's largest CPG snack brands with more than $1.3 billion in annual revenue. The work spanned brand strategy, distribution optimization, and market expansion — the kind of engagement that requires translating corporate-scale complexity into actionable operating plans.
Spicy Pickle — EVP
As Executive Vice President at Spicy Pickle, Marco oversaw the strategic growth of a national fast-casual franchise operation, growing the system from three to six locations. The role encompassed franchise development, operational excellence, and the dual-stakeholder challenge of serving both corporate objectives and franchisee economics simultaneously.
Entrepreneurial Ventures
Marco has founded and operated multiple restaurant concepts, including The Über Sausage (a multi-location Denver fast-casual concept whose domain was later acquired by the delivery platform that became Uber Eats) and Marco's Tuscan Grill, a quick-casual Italian concept built from scratch. These ventures provided direct, unfiltered experience in site selection, build-out, menu development, team building, and P&L management — the kind of operating knowledge that cannot be taught in a classroom or learned from a spreadsheet.

Across every role, the common thread is building — building brands, building teams, building financial structures, building the strategic foundations that allow a business to grow past its current ceiling.
